Birthday Protein Cupcakes

Birthday Protein Cupcakes 



















Ingredients: 

Batter ingredients: 
  • 1 1/3 cup oat flour
  • 1 egg
  • 2 egg whites 
  • 1/2 cup Applesauce
  • 1/2 cup plain fat free Greek yogurt
  • 2 scoops vanilla protein powder (or additional 1/2 cup oat flour if you don't believe in protein powder)
  • 1/2 cup baking stevia (measures like sugar, not the packets) 
  • 1 1/2 TSP Baking powder
  • 1/2 TSP Baking soda
  • 1 TSP Almond extract
  • 1 TSP vanilla extract
  • 1/4 cup Unsweetened almond milk
  • 2 TBSP sprinkles 
Frosting ingredients: 
  • 1 cup plain fat free Greek yogurt 
  • 1/2 scoop vanilla CASEIN protein (casein is much thicker than whey and makes a far superior frosting) 
  • 1 TBSP unsweetened almond milk
Directions: 

Batter: 
  1. Preheat oven to 375 degrees and line muffin pan with 12 muffin foil cups and spray with cooking spray (don't use paper, that shit will stick). 
  2. Blend everything except for sprinkles in a blender until batter is completely smooth. Stir in sprinkles. 
  3. Pour mix evenly into 12 foil muffin cups.
  4. Bake 18-20 minutes or until a knife comes out clean. 
  5. Let cool completely. 
Frosting: 
  1. While cupcakes are cooling mix Greek yogurt, casein protein, and almond milk in a small bowl.

  1. For the frosting, do you have to use casein protein? Can you substitute and use whey?

    1. you dont HAVE to use casein, it just makes a better frosting than Whey. But whey does work also.

  3. These turned out awesome, but it made 13 cupcakes for me and even with the extra serving, mine came out to 125 calories each. (I entered recipe via My Fitness Pal.)

    Any idea why? Ingredients I used that could be different from yours:
    Proteins - Optimum Nutrition Whey and Dymatize Elite Casein
    Oat Flour - from bulk bin at Whole Foods
    Nonfat Greek Yogurt - 0% Fage
    No Sugar Added Applesauce
    Unsweetened Almond Breeze
    Same kind of Sprinkles

    I want to enjoy these often but it's harder to fit into my plan at 125 calories versus 75. Any input you have will be great - thank you so much!

    1. I use Light and Fit Greek Yogurt by Dannon which has 20% less calories than Fage, so it might be that as well as the protein powder, Casien has more calories than whey.

  4. Would it make a big difference if I use just unsweetened applesauce?
